2cupsdried black beans
1tspcumin
epazotea few leaves or a tsp
1/2cfresh cilantro
oreganofresh, a lot, or if dry 1 tsp
1/2tspancho powder
1can diced tomatoes or tomato sauce
4tbsolive oil or more
chopped pickled jalapeno to taste1 Tbs or more
1tsalt
1-2chopped onionsdepending on size
1diced red bell pepperbig pieces
Optional - McIhenny tabasco sauce to tastea dash or two

Instructions
Soak beans over night and rinse 3 times.
Put in a crock pot and cover with water add bay leaf and cook for 5-6 hours, until soft. Final liquid should be thickish but not soupy, or however you like it, but this is not a soup.
Add onions and spices and tomatoes, after several hours of cooking.
Saute red bell pepper and stir into beans after cooking is complete so the bell peppers remain firm, cooked but not gelatinous.
